Sugar on Snow

Heat the syrup to 234 degrees (22-28 degrees about the boiling ponit of water).  Drizzle with a ladle over packed clean snow,  After the syrup stiffens twirl with a fork and eat.  Traditionally served with sour pickles or shaved ice.

Pork Roast Glaze

1 cup orange juice
1 cup maple syrup
1 tbsp dijon mustard
Mix ingreditents well.  Spoon over pork.  Baste several times throughtout cooking.

Apple Topping for Pancakes

2-3 apples, cored and sliced
¼ cup maple syrup

Boil apple slices in a little apple juice or water till tender.  Drain and add maple syrup.  Simmer for 5 minutes.  Serve on top of pancakes or Finnish pancake.  Dust with powdered sugar, if desired.

Walnut Gingerbread Cake

½ cup sugar                 1 tsp cinnamon
1 ½ cup flour               ¼ cup vegetable oil
½ tsp baking soda       ¼ cup maple syrup
½ tsp baking powder   ½ cup sour cream
½ tsp salt                     1 egg, beaten
½ tsp ginger                1 cup chopped walnuts
¼ tsp allspice

Sift together dry ingreditents (sugar, flour, baking soda, baking powder, salt, and spices).  Combine wet ingreditents (oil, syrup, sour cream and egg).  Add wet ingreditents to dry and beat well.  Pour into 8” square cake pan.  Sprinkle walnuts over top of cake.  Bake at 350 degrees for about 30 minutes.  Serve with whipped cream dusted, with nutmeg.

Maple Apple Crisp

makes one 9×13” crisp

Filling:

4 ½ cup apples, peeled, cored, sliced
¾ cup sugar
½ cup maple syrup
3 tbsp flour
1 tsp cinnamon

Topping:

1 ½ cup flour
1 ½ cup oatmeal
¾ cup melted butter
1 cup maple syrup
1 tsp baking powder
1 tsp baking sofa
½ cup chopped nuts (optional)

Mix filling ingreditents and put into 9×13 baking dish.  Combine topping ingreditents and spread over apple mixture.  Bake 350 degrees for 40 minutes.  Server warm with whippred cream or ice cream, drizzled with maple syrup.

Maple Pecan Pie

6 eggs
1 cup maple sugar (white sugar can be used if necessary.)
2 cups maple syrup
6 tbsp butter, melted
1 tsp vanilla extract
½  tsp salt
2 cups pecan halves
1 (9”) unbaked pie shell

Preheat oven 375 degrees.  In a large bowl, whisk together eggs and sugar until smooth.  Add syrup, butter, vanilla, salt and pecans.  Pour into pie shell.

Bake for 40-45 minutes or until a knife inserted near the center comes out clean.

Maple-Glazed Carrots Serves 4-6

8-10 medium carrots, peeled, cut into sticks or coins
1 tbsp butter
2 tbsp maple syrup

Boil the carrots for 5-8 minutes, till just tender.  Drain and return pot to the stove over low heat.  Add the butter and syrup and stir to coat the carrots well.  Simmer and stir for 2-3 minutes.

 

Maple Mustard

Mix together equal parts of prepared stone ground mustard and maple syrup.  Use as a dip for pretzels, glaze for ham, or as a fat-free salad dressing.

Maple Butter

Bring 1 cup maple syrup to a boil for 5 minutes.  Remove from heat and add 1 stick butter.  Allow butter to melt.  Pour mixture into bowl and beat until cool and thick.  Store in airtight container for several weeks.

Cooking With Maple Syrup–

General Cooking:  To substitute maple syrup for sugar, you should use 1/3 less maple syrup than the amountof sugar called for (for example, use 2/3 cup maple syrup for 1 cup sugar) and decrease the wet ingreditents by approximately 2 tablespoons for every half cup of maple syrup added.  Baking:  For every cup of sugar, substitute ¾ cup to 1 ½ cups maple syrup, and reduce the dominant liquid in the recipe by 2 to 4 tablespoons.  Don’t cut back on a liquid thatis likely to alter the flavor or texture of a recipe, such as the liqueur oil, or egg, when you have 2 cups of milk to play with.  You may also need to add ¼ to ½ teaspoon baking soda to reduce maple syrup’s slight acidity; this will not be necessary in recipes with buttermilk, sour milk, or sour cream.

I am almost temped to try selling your syrup here is Phoenix, because we can't get "Real" Maple Syrup here very easily, but with your new website and ease of online ordering, now we can.
